A traditional holiday celebration with a non-traditional macadamia nut crusted
pork loin.
Macadamia Nut Crusted Pork Loin
One Pork Loin, cut in half
One pound Butter, cut into cubes and soften
Three and one half cups Macadamia Nuts, toasted and finely chopped (3 ½)
Two cups Sweet Bread crumbs
One quarter cup Parsley, finely chopped
Honey, to drizzle
Sear pork loin in the oven at 500 degrees for 15 minutes. Remove from the oven
and allow to cool.
In a mixing bowl, combine butter, macadamia nuts, bread crumbs, and parsley and
mix until well blended. Coat the top of the pork loin with the macadamia nut
crust mixture. Drizzle the crust with honey and return to the oven.
Bake at 350 degrees for about 20 minutes or until the crust turns golden brown.
Take out of the oven, and allow the pork loin to cool for a few minutes before
slicing.
