Aloha,
This week bid a sweet farewell to summer with Sam Choy's Apple Crisp and Blueberry Cobbler. Sam is joined in the kitchen by Sharie Shima, NEWS 8 Meteorologist.


Apple Crisp

Apple Mixture:

Eight cups Granny Smith apple slices
One and one half cups brown sugar
One cup flour
One tablespoon ground cinnamon

Peel and core apples. Slice into sixteenths. Mix all of the ingredients together. Sprinkle over the apple slices. Mix well and place into glass custard cups. Top heavily with streusel.

Streusel:
One and one half cups butter
One and one half cups granulated sugar
3 cups flour

Mix butter and sugar till partially creamy. Add flour slowly. Mix until crumbly. Do not over mix. Top apple mixture heavily with streusel. Bake at three hundred and fifty degrees for forty five minutes, until golden brown. Serve warm with vanilla ice cream.

Blueberry Cobbler

One quarter cup butter
One cup cake flour
One and one half teaspoons baking powder
One half teaspoon salt
One quarter cup sugar
One half cup half and half
One quarter cup water
Two cups fresh blueberries
One third cup corn syrup
One eighth cup water

Pour melted butter into a shallow baking dish.


In a mixing bowl, combine flour, baking powder, salt, sugar, half and half and water. Pour mixture evenly over the butter. In a separate bowl, combine blueberries, water and corn syrup. Spoon evenly over the batter. Bake at three hundred and fifty degrees for forty minutes.

Pickled Mango

One gallon sliced green mango
Two cups sugar
One cup rice vinegar
Four tablespoons Hawaiian salt
One quarter pound li hing mui

Boil sugar, vinegar and Hawaiian salt until the sugar dissolves. Cool mixture.

Place sliced mango and li hing mui in jars. Pour mixture over mangos and refrigerate.

Mango Bread

Two cups cake flour
Two teaspoons baking soda
One and one half teaspoons ground cinnamon
One and one quarter cup granulated sugar

In a mixing bowl, sift ingredients and set aside.

One half cup canola oil
One half cup butter, melted
Three eggs, well beaten
Two teaspoons vanilla
Two and three quarters cup mango diced

In a large mixing bowl, combine oil, butter, eggs, and vanilla and whisk until well combined. Add dry ingredients and mix until well blended. Fold in diced mango. Divide batter into three equal parts and pour into loaf pans, sprayed generously with Pam. Let stand in pans for ten minutes before baking.

Bake at 350 degrees for 40 minutes. Test with toothpick.

Summer Drinks
Cool off from the summer heat with these delicious drinks.
Sam is joined in the kitchen by the folks from Southern Wine and Spirits.


Mojito

One half lime
Two mint leaves
Two teaspoons of sugar

Muddle (mix ) the above ingredients together in a eight ounce glass.
Add one shot glass of White Rum (approximately 1.8 ounces of rum)
Add ice and stir
Top off with one half cup of club soda
Garnish with sugar cane stick

Summer 1,2,3 Splash Margarita

One ounce triple sec
Two ounces tequila (your favorite brand)
Three ounces of sweet and sour
Splash of lime juice

Blend the above ingredients over one cup of ice in the blender. While blending add one cup of mango (or your favorite fruit), continue blending until all the ingredients are mixed.

Pour into your favorite glass and garnish with li hing powder and a lime wheel.

Iced Coffee

One half cup of coffee (regular of decaf)
One ounce of Kahlua Liquer
One ounce of Bailey’s Irish Cream Liquer

Shake the above ingredients in a mixing glass , and pour mixture over ice in your favorite glass. Garnish with whipped cream and a cherry

Appletini

One quarter lemon juice
One ounce of Fris Vodka (or you favorite vodka)
One half ounce of Vincent Van Gogh Wild Apple Vodka
Two ounces Sour Apple Pucker
Shake with ice and pour into martini glass and garnish with granny smith apple.
