Silly Chilly Pockets
- 1 tbsp vegetable oil
- 1 lb ground beef or chicken
- 1/2 stick (6 oz) Portuguese sausage, cubed
- 2 hot dogs, sliced
- 1/2 can diced tomatoes (7oz)
- 1 can tomato paste
- 1 package chili seasoning mix
- 2-3 cloves minced garlic
- 1/2 medium onion, finely chopped
- 1 can kidney beans, drained
- 1 cup mayonnaise
- 1/2 package (6 oz) grated cheddar cheese
- 1 package flour tortilla (soft taco size)
Pour oil into large thick bottom pot. Brown ground beef or chicken. Add Portuguese sausage and brown. Drain off excess fat but retain small amount. Add onions and garlic and sauté. Add hot dog slices, diced tomatoes, tomato
paste and chili seasoning mix. Add two cans (tomato paste size) of water. Stir well. Add kidney beans and bring to boil, stirring frequently. Reduce heat and let simmer for 20-30 minutes. Add mayonnaise and cook on low heat for additional 10 minutes.
Place a scoop of chili into middle of tortilla. Add grated cheese. Fold opposite sides of tortilla together and overlap remaining sides over the middle to form a pocket.
