Sam Choy’s Kitchen
Trio of Seared Ahi Poke Sushi Cones, with Tobiko
1 lbs Ahi, cubed and seared lightly
1 Medium Tomato, diced
1 cup Ogo (seaweed), chopped
1/2 cup Maui Onions, finely diced
2 Tbs shoyu
1 tsp Sesame Oil
1/2 tsp Fresh Chili Pepper, finely diced
2 Tbs Pickled Ginger, chopped
Combine all ingredients and mix well.
3 cups Steamed Rice
4 sheets nori, cut in three pieces
1 Tbs Red Tobiko
1 Tbs Green Tobiko
1 Tbs Orange Tobiko
Spread two tablespoons steamed rice on each of the sheets of nori. Place one tablespoon poke on top of the rice and roll into a cone. Garnish with Tobiko.
Seared Chilean Baby Lobster, with Ocean Salad
1 Lbs Chilean Baby Lobster, cut in half and seared lightly
1 Basket Yellow and Red Teardrop Tomatoes
1/2 cup Green Ocean Salad
1/2 cup Maui Onions, finely diced
2 Tbs shoyu
1 tsp Sesame Oil
1/2 tsp Fresh Chili Pepper, finely diced
Combine all ingredients and mix well.
