Banana Cream Pie

Yields One 9" Pie

Crust:
2 c Graham Cracker Crumbs
1/2 c Sugar
4 T Butter, melted
1 Very Small Ripe Banana

Cream all ingredients together and press firmly into a 9 inch greased pie pan. Bake at 350F for 15 minutes till light golden brown. Cool completely.

Filling:
4 Bananas cut into 1/4" slices
2 T Butter
3 c Milk
1/3 c Cornstarch
Pinch of Salt
3 Large Egg Yolks
3/4 c Sugar
1 1/2 t Vanilla Extract

Bring milk to a boil. In a bowl whisk cornstarch, sugar, salt and eggs together. Temper egg mixture with milk. Return to stove top and cook, scraping bottom of pot with spoon to prevent burning. Cook till it boils for 2 minutes. Turn off heat and stir in butter and vanilla. Assemble immediately.

Assembly:
Pour 1/3 of cream filling into pie shell, then put a layer of sliced bananas on top. Pour 1/3 of cream over that, then another layer of sliced bananas. And finally, pour remaining cream to form top layer. Chill 3 to 4 hours.

Whip Cream Topping:
2 c Whipping Cream
3/4 c Powder Sugar
1/2 t Vanilla Extract.
Begin whipping cream with a hand mixer. When cream starts to form peaks, add powdered sugar and vanilla extract.



Macadamia Nut Cream Pie

Yields One 9" Pie

Crust:
2 c Graham Cracker Crumbs
1/2 c Sugar

3/4 Roasted Macadamia Nuts, chopped
2 T Butter
3 c Milk
1/3 c Cornstarch
Pinch of Salt
3 Large Egg Yolks
3/4 c Sugar
1 1/2 t Vanilla Extract

Bring milk to a boil. In a bowl whisk cornstarch, sugar, salt and eggs together. Temper egg mixture with milk. Return to stove top and cook, scraping bottom of pot with spoon to prevent burning. Cook till it boils for 2 minutes. Turn off heat and stir in butter and vanilla. Stir in macadamia nuts. Pour filling into pie crust. Chill 3 to 4 hours.
