Sam’s Luau Crab Dip
- Garlic Toast or Crackers

1 pound cream cheese softened
-
1 pound crabmeat
-
1 cup mayonnaise
-
1 cup frozen spinach (thawed and squeeze out excess water)

½ cup artichoke hears sliced
-
1 teaspoon old bay seasoning
-
2 TBSPN grated Parmesan cheese
Mix all ingredients except cheese. Put in casserole dish and top with cheese. Bake at 350 F for 10
minutes. Serve on garlic toast or crackers.
Sam’s Pake Paella
(Serves 4)

½ pound butter
-
1 pound Uncle Ben’s rice
-
2 gallon chicken stock
-
1 onion diced
-
½ pound lup cheong diced
-
½ pound chicken thighs cut into strips
-
½ pound crab legs
-
½ pound shrimp
-
½ pound scallops
-
½ pound mussels
-
½ pound clams
-
1 teaspoon chopped garlic
-
2 teaspoon chopped ginger
Step 1
Melt butter in a large pan add onions and cook until softened. Add lup cheong, chicken, and rice. Stir
well to coat rice. Cover rice about 1 inch above with stock. Save any remaining stock. Cover and let simmer until all stock is gone and rice is cooked.
Step 2
In a separate pan put remaining stock, garlic, and ginger bring to a boil. Add all seafood and cook until clams and mussels open. Spoon cook seafood over rice and ENJOY!
