PINEAPPLE CHEESECAKE W/MACADAMIA NUT CRUST

Macadamia Crust:
3 c Macadamia nuts, chopped
3/4 c Sugar
4 oz Butter, melted

Mix all ingredients together and press firmly into a greased springform pan. Bake for 5 minutes at 350 degrees until golden brown. Cool.

Cheesecake:
2 lbs Cream Cheese, at room temperature
1 1/2 c Sugar
3/4 c Sour Cream
5 eggs
1 c Fresh Pineapple, chopped with juice strained out

In a bowl, mix cream cheese and sugar together until smooth. No lumps. Add in sour cream and mix. Scrape down the sides of bowl well. Add in eggs and mix till combined. Don't over mix. Pour over macadamia crust evenly and top with pineapple. Bake at 300 degrees for 1 1/2 to 2 hours. Let cool before serving.


CHOCOLATE, CHOCOLATE CHIP CHEESECAKE

Cookie Crust:
2 c Crushed Chocolate Cookie
1/4 c Sugar
1/4 c Butter, melted

Mix all ingredients together and press firmly into a greased baking pan. Bake for 5 minutes at 350 degrees. Cool.

Cheesecake:
Same cheesecake ingredients as pineapple cheesecake recipe except substitute 1 c of Chocolate Ganache instead of pineapple. Optional: Brownie bits.

Follow the same procedure as above, mixing in ganache with ingredients instead of topping it off. Pour over cookie crust. Can top with brownie bits if desired. Bake at 300 degrees for 1 1/2 to 2 hours. Let cool.

Ganache:
2 c Heavy Cream
4 c Chocolate Chips

Bring heavy cream to a boil. Pour cream over chocolate chips in a sturdy bowl and stir until smooth. Save 1 c to add to cheesecake mixture. Place chilled cheesecake on a cooling rack and place rack on a cooking sheet. Pour warm ganache over cheesecake to glaze. Garnish with chocolate chips on top if desired. Chill for 1/2 hour and serve.
