Tropical Island Poke

1 lb fresh Ahi
Juice from 1 lime
Juice from 1 lemon
Rock Salt to taste
3 Hawaiian chili peppers
1 cup yellow onions, diced
1/4 cup green onions, chopped
1 cup yellow mango, diced
1 cup papaya, diced
1/2 cup coconut milk

Cut Ahi in cubes. Juice one lime and one lemon. Pour over cubed fish
and let citrus cook fish for a couple of minutes. Add rock salt to taste.
Finely chop the Hawaiian chili peppers. Add peppers and onions to fish
and mix well. Carefully stir in mangoes, papaya and coconut milk.
Ready to serve.


Seafood & Sausage In A Kakaako Creme Broth

Serves 4

1 Tbs garlic, minced
1 Tbs ginger, grated
3 lbs fresh shrimp
3 lbs fresh clams
1 cup sweet onions, sliced
1 cup yellow onions, sliced
1 Portuguese sausage
3 cups clam stock
2 cups tomatoes, diced
1/4 cup green onions, chopped
3 Tbs butter
1/2 cup Kakaako Creme Ale Beer (NOTE: this is Sam's brew
but you can substitute with any beer)

In a heated and oiled wok, add minced garlic and ginger then quickly brown.
Add shrimp and clams and quickly stir-fry. Add sweet and
yellow onions, and Portuguese sausage. When sausage is medium
done then add clam stock, tomatoes, green onions, butter and
the Kakaako Creme Ale Beer.
Bring to a boil then serve.
