Blackened Pork Loin
1 ea Pork Loin
Spices:
1 t Salt
4 t Garlic Powder
3 t Black Peppercorn
2 t Black Pepper
3 t Coriander
2 t Paprika
3 T Cayenne Pepper
1 T Onion Powder
Coat pork loin with mixture of spices. Spices should be pre-mixed in a bowl before coating. Cut meat into sections suitable for cooking. Heat a large wok and add about 1/2 a cup of melted butter to oil the pan. Place prepared pork loin in the wok and cook both sides until slightly blackened. Top with peppercorn cheese sauce if desired for an extra taste and presentation.
Crispy Chicken And Bacon
2 ea Semi-Boneless Half Chicken
Dust with Flour
Salt & Pepper to taste
2 oz Bacon, diced
1 T Garlic, minced
4 oz Red Bell Peppers, sliced
1/2 lb Long Green Beans
Take chicken and dust lightly with flour. Sprinkle with salt and pepper, then place into a frying pan with skin facing up. Cook for a short while. Turn chichen over, skin side down, and continue to cook. Season a little bit more. Add bacon and garlic. Stir contents and turn over chicken again. Add peppers and green beans. Mix together and cook evenly.
