Okinawan Doughnuts with a Taro Twist (Poi Andagi)

1 pkg. poi 2 eggs 1/2 cup sugar 1 Tbs vanilla 2 1/2 cups flour 2 1/2 tsp baking powder Preheat oil. Mix poi, eggs & sugar. Mix dry ingredients in another bowl Incorporate wet ingredients into dry. Add water to moisten, Break off small bits of dough and deep fry till golden brown. Top with powdered sugar (optional)

Banana Poi - Tahitian Style with Haupia Ice Cream

6 ripe bananas sugar to taste 1/4 cup lemon 1/2 cup water 1 Tbs vanilla 1/2 cup cornstarch and water mixture coconut syrup wonton chips dusted with powdered sugar Mash bananas, add lemon juice and water. Simmer for about 1/2 hour. Pour mixture into a blender or use a hand blender to puree banana mixture. Add vanilla and cornstarch/water mixture to banana puree and mix well. Coat baking pan with vegetable spray. Pour mixture into baking pan. Cover baking pan with aluminum foil. Bake at 350 degrees for 1/2 hour to 45 minutes. Halfway through the baking process take off the aluminum foil. Let cool 4 - 5 hours. Serve with haupia ice cream. Drizzle with coconut syrup, sprinkle with won ton chips (dusted with powdered sugar). Garnish with mint leaves.
