Mahi Mahi Lemon Pepper Salad
4 Mahi Fillets
lemon pepper seasoning
1/2 cup flour mixed greens
wonton basket (optional)
SALAD:
2 cups somen noodles
1 cup cucumbers 1 cup tomatoes
VINAIGRETTE:
1 cup rice wine
1 Tbs. ginger 3 Tbs. sugar
Pan fry the mahi mahi. Put mixed greens in
wonton basket, place fish on top of the salad.
Garnish with vegetable curls, tofu, black
sesame seeds, cilantro and flowers.
Crackling Duck with Vegetables
1 whole duck
1 tsp. hot pepper flakes
salt/white pepper to taste
1/2 cup flour/cornstarch (50/50 mixture)
Season duck with hot pepper flakes, salt
and white pepper. Dust with flour/cornstarch
mixture. Deep fry until golden brown.
DRESSING:
1 1/2 cup citrus juice (orange)
1/2 cup soy sauce
1/2 cup balsamic vinegar
1/2 Tbs. garlic
1 tsp. ginger
2 cups brown sugar
pepper flakes to taste
GARNISH:
1 apple
flowers
Marinate deep fried duck in dressing and toss
lightly. Line the bottom of bowl with vegetables.
Put duck on top of vegetables and garnish with
apples and flowers.
