Oyster Poor Boy
7 fresh large oysters
1/2 tsp Tabasco sauce
cajun spice to taste
white pepper to taste
1 cup flour & corn meal mixture
1 qt. peanut oil for frying
Season oysters with cajun spice, tabasco and white
pepper. Dust lightly with cornmeal/flour mixture.
Deep fry.
French bread
SAUCE:
1 cup ketchup
1 tsp. Worcestershire sauce
1 Tbsp. horseradish
hot pepper flakes
2 Tbsp. mayonnaise
1 tsp. chili paste
2 tsp. shoyu
1 Tbsp. chopped green onions
sliced tomatoes, and lettuce as desired
Take the center out of French bread. Spread
sauce over break. Fill with
oysters. Add tomatoes and greens. Enjoy!
Stuffed Eggplant
1 round eggplant
STUFFINGMIXTURE:
1 cup fresh shrimp pepper to taste
1 Tbsp. cilantro,chopped 1 Tbsp. shoyu
1 tsp. garlic, minced 1 egg (white only)
1 tsp. ginger, minced 3 Tbsp. cornmeal & flour
hot pepper flakes
COATING:
flour cornmeal & flour
egg white
1 qt. peanut oil for frying
DIPPINGSAUCE:
2 Tbsp. grated daikon pinch of cilantro
1 Tbsp. shoyu bed of greens
1 Tbsp. sugar
Stuff eggplant with filling. Coat with flour,
dip in egg white, and dust with cornmeal/flour
mixture. Deep fry. Layer on a bed of mixed greens.
Combine ingredients for dipping sauce and serve
on the side.
