Airdate: October 3, 1998

Teriyaki Roll-Ups

3/4 cups chopped onions
2 tsp minced garlic
1 piece minced ginger
1 Tbs brown sugar
1 1/2 cups shoyu
1 cup water
1/2 papaya mashed
2 Tbs Sherry
1 lb Flank steak (thin sheets)
julienned carrots, green beans, green onions and red pepper strips

Marinate flank steak in onions, garlic, ginger, brown sugar, shoyu, water, papaya and sherry for 2 hours or overnight.

Heat grill and saute veggies till al dente.

Roll veggies in flank steak and season with salt and pepper. Skewer rolls with picks and grill till done.


Baked Citrus Crusted Onaga

2 Tbs butter
Vegetable pan spray (Pam)
1 lime, juiced
1/2 orange, juiced
1/2 lemon, juiced
1 tsp worcestershire sauce
4 6 oz pieces Onaga
1/4 cup breadcrumbs (or panko)

Preheat oven to 400 degrees.

In saucepan combine butter, juices, worcestershire sauce and heat till sizzling.

In baking pan sprayed with Pam, place fish skin side down, pour butter mixture over and top with breadcrumbs.

Bake for 8 - 12 minutes or till done.


Cinnamon Chicken

4 boneless chicken breasts (skin on)
1/4 tsp ground cinnamon
1/4 tsp ground cloves
salt & pepper
2 Tbs oil
3/4 cup chopped onions
sliced green onions (optional)
2 cloves minced garlic
2 tsp minced ginger
3/4 cup orange juice
2 Tbs raisin
1 Tbs capers, drained and rinsed
2 Tbs sugar

Rub and marinate chicken breasts with cinnamon, cloves, salt & pepper. Heat saute pan. Cook skinside down for 3 - 4 minutes. Add onions, green onions, garlic, ginger, flip chicken over and cook an additional 3 - 4 minutes. Drain off excess oil. Add orange juice, sugar, raisin, capers. Reduce heat and simmer approximately 10 minutes
