Dry Aku Poke Winner of the non-professional division-Penny Tada

2 lb Dry Aku, sliced 2 Tbs. sesame oil 2 Tbs. soy sauce 1 tsp. rock salt 2 Tbs. shoyu Simply combine all of the ingredients and you are ready to serve & enjoy!

Hana Hou Poke Winner of the professional division -Trini Castillo

2 lbs fresh Aku, cut in cubes 1 1/2 Tbs. Hawaiian salt with inamona 1 cup limo kohu (soft seaweed) 3 Hawaiian chili peppers, diced 1 oz lite soy sauce 2 cups Opihi (25 cent size) 10 cherry tomatoes, sliced in half 1 cup green onions, chopped Mix Aku cubes, Hawaiian salt, limo, Hawaiian chili pepper, soy sauce and marinate in refrigerator. For Opihi, take out Opihi from the shell, using a colander, add a small handful of Hawaiian salt, squeeze together several times, then rinse under running water. Add a little more salt, mix in colander and let drain, with a bowl under, in the refrigerator for one-hour. Place Aku poke and Opihi together in a large bowl, add green onions, cherry tomato and enjoy!
