Roasted Red Curry Chicken
3 Tbs oil
2 Tbs red curry paste
salt & pepper to taste
2, 3 1/2 lb roasting chickens
1 granny smith apple
1 head garlic, split thru center
8 sprigs cilantro
8 sprigs mint
1/8 cup butter
chicken stock for bottom of pan
Preheat oven to 350 degrees.
Wash and pat dry chickens, rub with mixture of red
curry paste, oil, salt & pepper. Stuff birds with 1/2 apple,
1/2 garlic, 1/2 cilantro and 1/2 mint. Truss birds and
roast for approximately 1 hour 15 min. to 1 hour 30 min. or
till done.
Capellini Pasta with Crab Sauce
1 Tbs butter
1/2 cup chopped green onions
1 garlic clove, minced
2 tomatoes, peeled, seeded and chopped
1/2 lb Crabmeat, cooked and shredded
1 Tbs lemon juice
1/2 tsp celery salt
cracked black pepper
1/4 cup parsley
4 oz capellini pasta
Cook capellini according to package directions.
In
saute pan, combine butter, garlic and green onions.
Cook about 3 - 4 minutes. Add tomato and
simmer for 1 - 2 more minutes. Add crabmeat, lemon
juice, celery salt, pepper and cook an additional 2 minutes.
Add chopped parsley. Place pasta
in serving bowl and top with crab mixture. Enjoy!
