Banana poi - Tahitian Style with Haupia Ice Cream

6 ripe bananas to taste, sugar 1/4 cup lemon 1/2 cup water 1 Tbs vanilla 1/2 cup cornstarch & water mixture coconut syrup wonton chips, dusted w/ powdered sugar mint leaves Mash bananas, add lemon juice and water. Simmer for about 1/2 hour. Pour mixture into a blender or use a hand blender to puree. Add vanilla and cornstarch/water mixture to banana puree; mix well. Coat baking pan with vegetable spray. Pour mixture into baking pan; cover with aluminum foil. Bake at 350 deg F for 30 to 45 minutes. Remove the foil halfway through the baking process. Let cool 4-5 hours. Serve with Haupia ice cream. Drizzle with coconut syrup and sprinkle with won ton chips. Garnish with mint leaves.

Okinawan Doughnuts with a Taro Twist (poi Andagi)

1 pkg poi 2 eggs 1/2 cup sugar 1 Tbs vanilla 2 1/2 cups flour 2 1/2 tsp baking powder Preheat oil. Mix poi, egg and sugar. Mix flour and baking powder in a separate bowl. Incorporate wet ingredients into dry. Add water to moisten. Break off small bits of dough and deep fry till golden brown. Optional: Top with powdered sugar.
