Deep Fried Kali Kali
with shoyu Ginger and Roasted Sesame Butter
1 piece Kali Kali
1/2 cup cornstarch
3 cups salad oil
1/3 cup chopped green onion
1 tsp chopped fresh cilantro
1 tbs roasted sesame butter (see recipe)
1/2 cup shoyu ginge sauce (see recipe)
Roasted Seseame Butter:
2 tbs crushed roasted sesame seeds
1/4 lb softened butter
salt and pepper to taste
shoyu ginger sauce:
4 tbs aloha shoyu
4 tbs fresh ginger, peeled and grated
2 tbs fresh garlic peeled and chopped
Combine
Directions: Bread fish in cornstarch. Deep fry
until cooked. Add roasted seasame butter and
shoyu ginger sauce on top. Garnish with green
onions and cilantro.
Wok Fried Shrimp
with Papaya Pineapple Marmalade
6 pieces 16/20 shrimp, marinated
marinade:
1/4 cup aloha shoyu
1 tbs white sugar
3 tbs white miso
1 tsp chili sauce
1 tbs chopped fresh garlic
1/4 tsp chopped fresh cilantro
3 tbs orange juice
Papaya Pineapple Marmalade:
1/2 cup diced papaya
1/2 cup diced pineapple
3 tbs sugar
Marinade: Combine all ingredients
together. Marinade shrimp.
Shrimp: after marinating shrimp, stir
fry in wok until just done. Chill
Papaya Pineapple Marinade: cook fruit
and sugar in a saucepan for 20 minutes.
Serve warm or cold.
Presenation: Serve with Papaya Pineapple Marinade.
