MacNut Crusted Opah
2 lbs. fresh Opah
salt and pepper
2 cups flour for dusting
4 eggs, beaten
2 1/2 cups macadamia nuts, finely ground
macadamia nut oil for cooking
SWEET and SOUR SAUCE
1 cup sugar
1 cup rice wine vinegar
juice of 4 Ka'u oranges
1 1/2 cups sweet Ka'u orange marmalade
1 tsp. ginger
1 tsp. garlic
1 tsp. cilantro
Combine sauce ingredients in a saucepan over
stove and cook, over medium heat, stirring
frequently. This will be the glaze to pour over
the fish once cooked.
Coat fish in flour and shake off excess flour,
dip in egg then in macadamia nuts to coat. Heat
oil in wok to 350 degrees. Place fish in and
cook until brown, approximately 4-5 minutes.
Serve MacNut Crusted Opah on individual
plates or platter and pour glaze over the top - enjoy!
Roasted Sausages and Peppers
Assorted Sausages (Uncle Louie)
1 each bell peppers (yellow, red, orange, green)
1/2 cup red onions
1/2 cup Maui onions
Assorted mustards: dijon, whole grain,
deli, plain yellow
Optional: beer, hot sauce, horseradish
Serve with: sauerkraut, pepperucinnis
Cut and fry sausages in pan. Saute peppers
and onions. Set aside, layer sausages and
peppers on top of hoagie roll. Drizzle with
mustard.
