Ogo Tempura
2 lbs. mahi mahi
salt & pepper to taste
dust with flour
TEMPURA BATTER:
1 cup flour
1/2 cup rice flour
1 teaspoon baking powder
1/2 cup corn starch
1/4 teaspoon salt
1 2/3 cups water
1 egg, beaten
1/2 lb. fresh ogo
oil for frying
dust with furikake
Sift dry ingredients together. Combine with
water and egg. Add dry mixture to wet mixture.
Heat oil to 365 degrees F. Dip fish in batter
and then wrap ogo around fish securely. Deep
fry. Garnish with furikake and serve with
chips.
Asian Style Poke
2 lbs. fresh ahi
1/3 cup onions
4 Tbsp. furikake
1/2 teaspoon pepper flakes
1 cup chopped ogo
2 Tbsp. sesame seed oil
3 teaspoons balsamic vinegar
1 Tbsp. sugar
1 Tbsp. shoyu
1 Tbsp. green onion, chopped
Ogo Salad
2 cups fresh ogo (mixed)
3 teaspoons balsamic vinegar
1 Tbsp. sugar
1/2 teaspoon red chili flakes
1/4 cup onions, julienne
1/2 cup tomatoes
