Deep Fried Kali Kali with Tropical Fruit Salsa
1 piece 1 1/2 lbs Kali Kali
2 1/2 cups flour
salt and pepper to taste
3 cups salad oil
Tropical Fruit Salsa
1/4 cup diced honeydew melon
1/4 cup cantelope
1/4 cup pineapple
1/4 cup papaya
1/4 cup fresh corn
1/4 cup black beans
1/4 cup white beans
1 Tbs chopped red onions
1 Tbs chopped round onions
Marinade
1 cup honey
1 Tbs shoyu
1 cup orange juice
1/4 cup cider vinegar
salt & pepper to taste
Mix tropical fruit salsa ingredients together
in large mixing bowl. Add marinade. Toss
everything together. Heat oil in wok. Score
fish on two sides. Roll in flour. Deep fry till
fish is cooked. Pour tropical salsa on fish.
Spicy Shrimp Salad
8 pieces 16/20 shrimp butterflied with shell on
1 tsp salad oil
Marinade
1/4 cup shoyu
1 tsp chopped garlic
1 tsp chopped cilantro
1 tsp chili sauce
1 tsp chopped green onion
1 Tbs sugar
1 Tbs sesame oil
1 tsp roasted sesame seeds
Mix all ingredients together.
8 oz mixed tossed greens
2 oz somen cooked
1 flour tortilla cooked
Oriental Dressing
3 cups mayonnaise
1/2 cup shoyu
3/4 cup sugar
1/4 tsp white pepper
1 1/2 tsp black sesame seeds
1 Tbs sesame oil
Heat oil in wok. Stir fry shrimp 3/4 way cooked.
Place on a large plate the flour tortilla shell, tossed
greens, somen and shrimp last. Serve with oriental
dressing.
