Kahuku Shrimp
& Kahuku Eggplant Stir-Fry
6 large Kahuku shrimp, peeled and deveined
2 large Kahuku eggplant, sliced into 1" chunks
2 Tbs light salad oil
1 Tbs garlic, minced
1 Tbs ginger, minced
1 tsp chili flakes
1 Tbs oyster sauce
1 Tbs shoyu sauce
salt and pepper
chicken stock
2 Tbs cornstarch mixed with 2 Tbs water
Heat oil in the wok. Add the shrimp and the
eggplant. Cook about 1 minute. Add the garlic,
ginger, chili flakes, and saute another minute
or so. Add the oyster sauce, shoyu, chicken
stock, and salt/pepper. Cook about 2 minutes
until shrimp are just cooked and eggplant is
slightly soft. Add cornstarch mixture and let it
come to a boil.
Serve over noodles or rice, and enjoy!
Chicken with Papaya
and Pineapple Salad
6 oz sliced chicken meat
2 Tbs salad oil
1 Tbs shoyu
1 Tbs oyster sauce
1 tsp garlic, minced
1 tsp ginger, minced
pinch of salt & pepper
2 flour tortillas (fried)
1 handfull of mixed salad greens
1/4 cup diced papaya
1/4 cup diced pineapple
curls made from carrots, daikon and beets

Dressing.
Marinate the chicken with shoyu, oyster
sauce, garlic, ginger, salt and pepper,
about 10 minutes. Heat the oil in a wok.
Add the marinated chicken and stir fry
about 4 minutes until the chicken is
just cooked. Remove from the heat.
Place one tortilla on a plate.
Top with salad greens, then place
on the next tortilla shell. Pour
cooked chicken on top. Then top
with papaya and pineapple. Garnish
with vegetable curls and Sam's
dressing. Enjoy!
