Sesame Crusted Ahi
with Vegetable Trio,
Chinese Vinaigrette and Curry Oil
Ahi
1 4 oz piece Ahi
1/4 cup black sesame seeds
1/4 cup white sesame seeds
2 Tbs chili pepper water
Vege Trio
1/4 cup daikon, carrot & cucumber - julienne
Chinese Vinaigrette
1 Tbs black vinegar
1 Tbs curry oil (see recipe)
salt & pepper to taste
Whip above ingredients together well.
Curry Oil
4 Tbs curry powder
1 cup salad oil
Heat above 2 ingredients for 20 minutes
then let sit for one-hour.
Rub Ahi with chili pepper water then
roll in mixture of black and white sesame
seeds. Heat pan and sear each side
leaving inside rare. Mix vege trio with
Chinese vinaigrette. Slice Ahi into 1" squares
and lay 3 pieces on plate forming a triangle.
Place vegetables in the middle of plate.
Drizzle both vinaigrette and curry oil around
plate.
