TOMATO CRAB
1 whole crab, cut into 4-6 pieces
2 Tbs salad oil
4 tomatoes, cut into wedges
1 cup sliced vegetables, such as
onions, celery, bell peppers, mushrooms
1 Tbs chopped garlic
2 Tbs shoyu
2 Tbs oyster sauce
1 cup chicken stock
1 tsp tomato paste
Method: Heat oil in heavy skillet. Add crab.
Cook about 1 minute. Add the vegetables,
garlic, shoyu, oyster sauce, chicken stock,
and tomato paste. Cover and cook about
8-10 minutes.
LOCAL BOY SMOKED PORK
1 Tbs salad oil
6 oz smoked pork, sliced thinly
1 Maui onion, sliced thinly
2 Tbs shoyu
1 Tbs brown sugar
1 shot (1 oz) whiskey
1 cup cooked rise
1 Tbs green onion
Method: Heat oil in heavy skillet. Add pork
and brown. Add Maui onions and cook
about 2 minutes, until onions are soft. Add
shoyu, brown sugar and whiskey. Be careful
not to add whiskey over an open flame
because it will ignite. Cook another 2 minutes.
Pour over rice and sprinkle with green onion.
