Lomi Lomi Salmon
Makes 6 servings
1 cup salted salmon, chopped
1 cup fresh ahi, cubed
1/2 cup ogo, chopped
3 medium tomatoes, chopped
1 small Maui onion, chopped
1/4 cup green onion, thinly sliced
Cover salted salmon with water and soak
overnight; drain and rinse. In a large bowl
combine salmon, ahi, tomatoes, onion and
green onion; mix well. Chill.
Chicken Luau
3/4 cup boneless chicken breast halves
1 Tbs Hawaiian salt
1/2 tsp baking soda
4 Tbs butter
1 each medium onion, chopped
2 cups chicken stock
1 cup coconut milk
1 lb luau leaves, cooked
1/2 tsp salt
1 Tbs sugar
TO COOK LUAU LEAVES:
Rinse luau leaves and trim off
stems and thick veins. In a stock
pot bring 3 cups of water, Hawaiian
salt and baking soda to a boil. Add
luau leaves, reduce heat and cook,
partially covered for one hour. Drain
and squeeze out excess liquid.
Remove skin from chicken and cut
into cubes. In a large saucepan,
heat butter and saute onions until
translucent. Stir in chicken and
chicken stock. Cook 3 minutes,
stirring frequently. Add coconut
milk, cooked luau leaves, sugar
and salt. Simmer for 30 minutes,
or until chicken is cooked.
