Blackened Sword Fish
3 pieces (3 oz. each) Ono
2 Tbs Paul Prudhommes
Blackened Red Fish Magic
shoyu Butter Sauce
1 Tbs shoyu
3 Tbs butter
2 Tbs oil
Season swordfish with Blackened Red
Fish magic. Heat oil til it smokes. Sear
fish on both sides until cooked. Pour
shoyu butter sauce over fish. Enjoy!
Poke Kabobs
1 lb cubed Marlin
1/2 cup shiitake mushrooms
cut in quarters
12 cherry tomatoes
1/4 cup shoyu
1/2 cup chopped ogo
1/4 cup chopped green onions
1/4 cup chopped round onions
1 Tbs sesame oil
6 pieces bamboo skewers
2 Tbs salad oil
Mix all ingredients together. On each
bamboo skewer place marlin, mushroom
and cherry tomato; repeat again. Heat
oil in wok. Sear until medium rare.
