Marinated Poke in coconut milk

8 oz. Fresh Ahi, diced 1 medium cucumber, diced into 1/4" pcs 1 medium tomato, diced into 1/4" pcs 1/2 round onion, diced into 1/4" pcs juice from 1 fresh lime 1/4 cup green onion, chopped 1 Tbs cilantro, chopped pinch of chili flakes 2 cups fresh shredded coconut, grated for squeezing in cheesecloth cilantro to garnish Place the shredded coconut in a bowl and pour 1/2 cup warm water over it. Let it sit while you're preparing the other ingredients. Dice the Ahi, cucumber, tomato, and onion, and place in a mixing bowl. Chop the green onion and cilantro, then add to the other ingredients. Add a pinch of chili flakes. Squeeze the lime juice into the bowl. Gently stir all of the ingredients together. Pour all of the coconut and its liquid into the cheesecloth. Squeeze the cheesecloth tight over the bowl with the poke ingredients, so that the liquid streams onto the poke. Gently toss to coat the Ahi with the coconut water. Place on serving plate, and garnish with cilantro and lime slices.

Spicy Poke

1 lb. fresh Ahi 1 medium tomato, diced 1/4" pcs 1 cup chopped limu 1/2 cup chopped round onion 1 cup cucumbers, diced 1/4" pcs 1/4 cup green onions, diced 1/4" pcs 2 Tbs shoyu sauce 1 tsp sesame oil 1/2 tsp crushed red pepper or 1 Hawaiian pepper, seeded & minced 1 tsp Kim Chee base to taste Hawaiian salt Cube the Ahi into bite size pieces. In a mixing bowl add all of the remaining ingredients. Toss gently to mix it all together. Be sure to keep the fish very cold. Add salt to your taste. ENJOY!
