90's Style Potato Salad

Makes 8 servings 2 lbs red new potatoes 1/2 cup celery, minced 1/2 cup carrots, minced 1 1/2 cups fresh chopped spinach 2 cups shredded crabmeat 1/2 cup bay shrimp 4 hard boiled eggs, chopped 1/2 cup whole medium pitted olives 1/4 cup sliced water chestnuts 1/4 cup fresh corn kernels 1/2 cup Maui onion, minced 2 1/2 cups mayonnaise salt and pepper to taste Cook new potatoes in slightly salted boiling water until fork is tender. Set aside to cool, then cut into eights. In a large mixing bowl combine potatoes, celery, carrots, spinach, crabmeat, shrimp, eggs, olives, water chestnuts, corn, onion, and mayonnaise; toss lightly. Season to taste with salt and pepper.

The Best Beef Stew Omelet

Serves 6 4 lbs chuck roast, cut up 1/2 cup celery leaves 1 small onion, minced 1/2 cup salad oil 2 cloves garlic, crushed 5 cups beef stock or broth 2 medium onions, chunked 2 cups chicken broth 3 medium carrots, chunked 4 potatoes, chunked 4 stalks celery, chunked 1 1/2 cups tomato paste flour to dust meat (about 1 cup) salt and pepper to taste 3 eggs (or egg substitute) for Omelete Sprinkle beef with salt and pepper, then dust with flour. Brown meat with garlic, minced onion, and celery leaves, about 10 minutes on medium or low medium, unitl well browned. Keep stirring to avoid burning. Extract oil, add beef and chicken broth, add tomato paste, bring to a boil, then reduce to simmer. Cover, let cook about 1 our or until beef is tender. Add carrots and potatoes and cook 5 minutes, then add onions and celery and cook 10 minutes more. Adjust seasoning with salt and pepper. One of my secrets for making a thick rich stew is that I use sweet rice flour diluted with a little water for thickening. Bring stew to a boil, add sweet rice flour/mixture a little at a time, simmering and stirring until you get the right consistency. This stew is best the next day, after all the flavors have had a chance to blend. Make your favorite plain omelete recipe. Use 3 eggs or egg subtitute. To serve place rice in a bowl, portion of omelet on top, and top off with beef stew. Enjoy!
