Mahimahi Stir-Fry With Black Beans

3 pcs. 2-3 oz Mahimahi 2 Tbs salad oil pinch salt & pepper 1 Tbs flour 1 cup mixed stir-fry vegetables 1 Tbs ginger, minced 1 Tbs garlic, minced 2 Tbs black beans, fermented 1 Tbs sugar 2 cups chicken stock 1 Tbs cornstarch mixed with 1 Tbs water for thickening for garnish curled carrot & beet for garnish ogo Heat oil in wok. Season mahimahi with salt and pepper then dust with flour. Saute in hot oil about 1 minute on each side. Add vegetables, ginger, garlic, black beans, sugar and chicken broth. Cook about 2 more minutes and remove fish. Continue to cook about 2 minutes more or until vegetables are just cooked. Thicken with cornstarch. Place 1 piece of Mahimahi on plate. Top with 1/2 of the vegetables. Place another piece of mahimahi on top of the vegetables. Place remainder of vegetables on top, then top with the last piece of Mahimahi. Pour sauce over and garnish with carrots, beets, and ogo.

Ahi Cake With wasabi Aioli

8 oz Ahi, cut into small cubes 2 Tbs mayonnaise 1 Tbs green onions, chopped 1 Tbs shoyu 1 Tbs ogo, chopped 1 tsp sesame seed oil 2 Tbs panko 1 Tbs dill, chopped 2 Tbs flour for dipping 1 cup mixed salad greens 1/2 cup wasabi aioli 2 Tbs salad oil wasabi Ailoi 1 cup mayonnaise 1 Tbs olive oil pinch salt and pepper 2 Tbs wasabi (Whisk all ingredients together.) Mix Ahi, mayonnaise, green onions, ogo, shoyu, sesame oil, panko and dill. Form small cakes. Dust with flour. Heat salad oil in pan and cook cakes about 2 minutes on each side; until golden brown. Place atop salad and spoon wasabi ailoi on top.
