Pulehu Rib Eye (5 pm show)

Serves 4 to 8 4-8 ounce rib eye steaks (marinated overnight) Enough oil for deep frying onion slices 1 medium onion, sliced very thinly into circular slices Enough flour to dust onion slices Special Teriyaki Glaze (recipe below) Marinade: 2 cloves minced garlic 1 1/2 cups shoyu 1 cup sugar 4 Tablespoons minced ginger 2 Tablespoons thinly sliced green onions 1/8 teaspoon white pepper 1) Combine marinade ingredients, blend well, and marinate steak overnight in the refrigerator. Grill over charcoal or broil in the oven just the way you like it, drizzle with Special Teriyaki Glaze, and top with thin and crispy fried onions. 2) To make the fried onion garnish, slice an onion into paper-thin circular slices, then dust slices with flour. Heat oil for deep-fat frying to 350-degree. Drop in onions and fry until golden brown, while moving around with tongs so they donąt stick together. Special Teriyaki Glaze: 1/2 cup shoyu 1/4 cup mirin (Japanese sweet wine) 1/4 cup water 2 Tablespoons brown sugar 1 teaspoon minced garlic 1 teaspoon minced ginger 1 Tablespoon cornstarch mixed with 2 Tablespoons water 1) In a small sauce pan bring all ingredients, except cornstarch mixture, to a boil. Blend cornstarch and water to make a smooth paste, then stir into pan. Reduce heat and stir frequently, until thickened.

Stir Fry Chicken with Fried Noodles (5 pm show)

Serves 4 1 package Times Stir Fry Chicken Mix (Chicken and Vegetables) 2 Tablespoons shoyu 2 Tablespoons oyster sauce 1 Tablespoon minced garlic 1 Tablespoon minced ginger 2 Tablespoons green onions, thinly sliced 1 can (8 oz) chicken broth 1 Tablespoon cornstarch mixed with 2 Tablespoons water 1 (8 oz) package chow mein noodles 1) Heat 2 tablespoons salad oil in pan and stir fry the chicken. Cook the chicken about 3-5 minutes and add the mixed vegetables. Add shoyu, oyster sauce, garlic, ginger and chicken broth. Bring to a boil and add the noodles. 2) After about 1 minute, remove the noodles, and place on a warm platter. Add the cornstarch mixture to the stir fry and bring back to a boil. Pour over the noodles and top with green onions.

Pan Fried Catfish with Sam's Sweet & Sour Sauce (6:30 pm show)

2 Catfish fillet flour pinch of salt pinch of pepper 2 Tbsp salad oil 1 Tbsp ginger 1 Tbsp garlic 1 cup prepared sweet and sour sauce 2 Tbsp hot mustard 1 cup mixed vegetables 2 Tbsp green onions Heat oil in pan. Season fish with salt and pepper, then dust with flour. Put in hot oil and cook about 3 minutes on each side. Remove fish and put on warm plater. Meanwhile, add ginger, garlic, and vegetables, and cook about 2 minutes. Add sweet and sour sauce and mustard and cook another minute or two, then pour over the fish. Garnish with green onions.

Stir-Fry Chicken and Beef Fajitas (6:30 pm show)

2 Tbsp shoyu 1 tsp chili pepper flakes 1 tsp brown sugar 1 Tbsp minced ginger 1 Tbsp minced garlic pinch of salt pinch of pepper 1 tsp chopped cilantro 1 cup thinly sliced beef or chicken 1 Tbsp salad oil 1 Tbsp green onion 4 flour tortilla shells 1 cup mixed vegetables 1 Tbsp Hoisin Sauce Mix first 8 ingredients together and marinate meat about 15 minutes. Heat 1 tablespoon salad oil in heavy skillet until hot. Add marinated chicken or beef and cook about 4 minutes. Add mixed vegetables and cook another 2 minutes. Meanwhile, in another skillet on high heat, heat tortilla shells about 30 seconds on each side. Remove hot tortilla shells and spread some Hoisin sauce on each one. Pour a quarter of the chicken or beef and vegetables on each of the tortillas. Sprinkle with green onions and roll-up.
