Azure's Peach and Pear Cobbler

For The Filling:

Five (5) 15.25 oz cans peach halves
Three (3) 15.25 oz cans pear halves
1 stick butter or margarine
2 cups sugar - or to taste
2 tablespoons cinnamon
2 tablespoons nutmeg
6 hard shakes ground allspice or mace

Bring to a low boil. Add:
1 tablespoon cornstarch (or alternate thickener)

Secret Sauce:
Squeeze a lemon or tangerine - Just one squeeze!

Crust:
Melt quarter stick (1/4) butter or margarine in pan
Line pan with 4 crusts

Bake at 325 degrees for about 10 minutes. Add filling and top crust. Bake for another 20 minutes or until top crust is brown.



Black Eyed Peas and Chicken or: Soul Eyes Local Thighs

4 bags frozen black eyed peas
grape seed oil (or your choice of oil, light oil recommended)
4 bay leaves (about)
1 teaspoon rosemary
garlic and garlic powder
seasoned salt to taste
1 onion
4 stalks celery
chicken thighs, cleaned and cut into pieces (not too small)
black and red pepper, to taste - a little hot recommended

Cornbread on the side:
2 packages Dromedary cornbread mix
2 eggs
1 1/2 cups skim milk
1 can creamed corn

Blend all together. Melt:
1/4 pat of butter or margarine in a cast iron skillet. Pour melted butter into batter. Mix & pour batter into hot skillet. Cook approximately 45 minutes (or as box indicates). Chop onions and celery. Cook on high, add chicken and seasonings. Cook chicken well done.

Meanwhile, cook beans on high in 4 cups of water 20 minutes or until beans are soft. Do not cook beans until they are mushy or creamy, eek!

Add chicken and veggies to beans and cook another 5 - 15 minutes. Serve with cornbread or rice.
