"Pilipino Pinakbet" with Hawaiian Taro
Recipe submitted by Luzviminda Balicoco Durkan – Keaau, Hawaii

½ pound Hawaiian taro
1 bundle of eggplant
1 bundle of long beans
1 bundle of okra
1 bundle of wing beans
1 piece long bitter melon
3 tomatoes
10 pieces dried shrimp
¼ pound pumpkin
 small piece chopped garlic
1 small piece ginger
¼ tsp salt
½ cup fish sauce or bagoong
2 cups water

Procedure:

First cut the eggplant, long beans, okra, wing beans, bitter melon, pumpkin, and taro into 1 inch pieces. Put aside. Slice tomato, ginger, and garlic and put into the pot. Add the fish sauce or bagoong, salt, 2 cups water, pumpkin, taro, and shrimp. Bring to a boil for 5 minutes.

Add all remaining vegetables to the pot continue to boil until vegetable are cooked to your liking.
